蠔油鮮蝦炒蘆筍 ( 4 人份量 ) |
Shrimp Stir-fry Asparagus with Oyster sauce |
材料

- 鮮蝦 ( 中蝦去殼去腸 ) 1磅
- 露筍 1 磅
- 油 1 湯匙
- 水 4 杯

- 1 lb. shrimp - remove shell and vein
- 1 lb. asparagus
- 1 Tbsp oil
- 4 cups water

醃蝦材料

- 1/4 white pepper powder
- 1/4 tsp salt

調味料
| Seasoning Mix |
- 蠔油 1 ½ 湯匙
- 豉 油 1 茶匙
- 胡椒粉 ¼ 茶匙
- 糖 1 茶匙
- 麻油 2 茶匙
|
- 1 1/2 Tbsp oyster sauce
- 1 tsp soy sauce
- 1/4 tsp white pepper powder
- 1 tsp sugar
- 2 tsp sesame oil

製法 |
Method |
- 鮮蝦洗淨掠乾 , 用胡椒粉 , 生粉調味拌勻備用
- 露筍洗淨 , 切去底部較硬部份 , 其餘切 1 ½ 吋長備用
- 用 4 杯滾水 , 放入露筍約煮 2 – 3 分鐘 , 再用凍水沖洗 , 掠乾
- 調味料混合備用
- 熱鑊加油 1 湯匙 , 放入蝦 , 兩面煎至半熟 , 加入調味料混合炒勻 , 再加入露筍炒熱 , 即可上碟享用

- Clean shrimp; dry and mix with white pepper powder and corn starch; set aside
- Clean asparagus, remove hard root part; remainder cut 1 1/2 lenghts; set aside
- In pot, cook asparagus with 4 cups water for 2-3 minutes; run cold water; dry
- Mix well all items in seasoning mix.
- Heat pan with 1 Tbsp oil; add shrimp, 1 layer, till turn pink; flip each and cook other half till 70% cooked; add seasoning mix and asparagus; stir-fry till hot; ENJOY
